Corn and Zucchini Fritters

These fritters are so easy to make and can be made ahead of time. They are great to freeze for breakfast, brunch or lunch. Just reheat in a microwave or frying pan, add your extra ingredients and enjoy a healthy gourmet meal.
Prep Time 10 minutes
Cook Time 22 minutes
Servings 21 Fritters

Ingredients

  • 1 1/2 Zucchini
  • 1 tin Corn Kernels
  • 1 tin Creamed Corn
  • 3 eggs
  • 3/4 cup Plain Flour
  • 1/4 cup Self-Raising Flour

Instructions

  • Grate zucchini
  • Mix zucchini and both corns in a large bowl
  • Add eggs and mix
  • Season with salt and pepper
  • Add flours and mix gently
  • Heat frying pan on medium and add olive oil if using a stainless steel pan
  • Cook fritters by adding 1/4 cup of mixture for each fritter to the hot pan
  • Cook until brown on bottom (3-4 mins)
  • Flip and cook for another 3-4 mins
  • Add more oil and repeat until all mixture has been used up

Notes

The wonderful thing about these fritters is that you can make totally different meals by changing up what you are serving them with. These are some of my favourites that I like to experiment with. Choose some of the following ingredients to mix and match with.

Baby spinachCherry tomatoes (raw or blistered)Crumbled feta
A squeeze of fresh lemon
RocketAvocado (smashed or sliced)Seared halloumiFresh herbs (coriander, parsley, or basil)
BaconShaved parmesanBalsamic glaze
Egg (fried or poached)Tomato Relish
Greek Yoghurt
